Health & Wellness Fridays: Strawberry Salad

Happy Friday, everyone! Since you can’t come to the museum for our Eat a Georgia Rainbow program, we’ve decided to bring Eat a Georgia Rainbow to you. Check out our April recipe of the month, Strawberry Arugula Salad, and learn more about some delicious in-season greens.  

Ingredients & Recipe

1 cup of arugula or spinach
2 cups of strawberries
1/3 cup of feta cheese
1 1/2 tablespoon of balsamic vinegar
1 tablespoon of Dijon mustard
1/4 cup of olive oil
1/2 tablespoon of honey
Salt to taste

1. Slice strawberries and put in a bowl with the arugula or spinach.
2. Add balsamic vinegar, Dijon mustard, olive oil, and honey and mix the ingredients until the strawberries and arugula or spinach are evenly coated.
3. Add in feta cheese and a pinch of salt if desired.
4. Mix the salad again.
5. Enjoy!

Let’s learn about our ingredients! Arugula and spinach are both in season in Georgia right now. In-season fruits and vegetables are nice and fresh because they’re being grown and harvested right now, and buying them can support local farmers. These foods are usually cheaper because it costs less money to get those foods to the grocery store. 

Arugula and spinach are both good sources of vitamins A, C, and K. Vitamin A helps your eyes stay healthy; vitamin C gives you a strong immune system; and vitamin K helps your bones.
